bthere Magazine: My City On A Plate


Brussels Airlines in-flight magazine, bthere, featured Eating Brooklyn this month in their April, Art Brussels Issue, on it's food page. There is a nice bit about the blog, recommendations for visitors to some of my favorite spots in the city and a photo I took at New Amsterdam Market. it's a beautiful publication and I hope to be collaborating and working more with the magazine in the future. Farm Fresh Brunch Skillet for One

For brunch today I made use of some of the special places we have here in Park Slope, Brooklyn. I went to Valley Shepard Creamery on 7th Avenue, for their Farm Fresh, True Free Range Brown Eggs. I bought my favorite Quinoa Polenta at The Park Slope Coop along with the organic red peppers and thyme. Then for the first time I went to Fleisher's on 5th Avenue, where they have grass-fed and organic meats. I chose their Maple Breakfast Pork Sausage, which is made with salt, black pepper, sage, ginger, nutmeg, cumin, onion, garlic and maple syrup. The sausage caramelizes really nicely and is really lean, but if you are not into meat you can just add another slice of the polenta and its just as good. The fun part is you can just eat it right out of the skillet!

Farm Fresh Brunch Skillet for One

2 farm fresh brown eggs 
Quinoa polenta (you can use any ready to slice polenta)
3 slices of organic red pepper (or 1/2 a pepper if cooking two servings)
Fresh thyme
unsalted organic butter (I used Kate's Homemade, also from the food coop)
1 maple breakfast sausage (you can use any grass-fed organic sausage)
Freshly ground peppercorns
Sea salt 

You will need 1 or 2 frying pans and your 6 inch cast iron skillet for your serving dish. 

Give your frying pan a drizzle of olive oil. I cooked a couple sausages and 1/2 of a red pepper in separate pans and used the extra for a second dish for my husband. Add your sausage and red pepper to the pan/pans. When peppers and sausage are ready, save on the side.

In your cast iron skillet melt a bit of butter and add a slice of the polenta about 1/4 inch thick.
cook for a couple minutes on each side or until it starts to slightly brown.

Break two eggs into the skillet to fry them and add a bit of salt and pepper. Add your sausage and peppers to the pan and sprinkle everything with fresh thyme.

When eggs are cooked its ready to serve and eat directly out of the skillet. Enjoy!

I made this very simple healthy and yummy recipe today for lunch. Steamed sweet potatoes, cauliflower and organic chicken sprinkled with Pecorino Romano, freshly ground gourmet pepper blend (Park Slope Coop) and Eagle Street Rooftop Farm Pepper Salt. Could not be any easier than that.

A tour of Kings County Distillery which ends with a tasting is a must do in Brooklyn, their whiskey truly is THE best around. They also make a chocolate whiskey, great for your valentine.

New Year's Eve Panforte

Last year I made Struffoli for New Years Eve, so this year I was planning to make my personal favorite during the holidays, Panetone, but then I found out how difficult it was to make, so instead I settled on trying my hand at baking a Panforte, which is super easy. 

My father is the one who introduced me to Coluccio in Bay Ridge, Brooklyn. Technically called D. Coluccio & Sons and is located on 60th Street just a couple blocks away from the elevated train over New Utrecht Avenue in the Boro Park section of Brooklyn. Coluccio was my no brainer go to place for all my ingredients for my Panforte

You believe your in Italy when your inside the Italian Specialty shop, everyone who shops there is Italian. They have a huge selection of farro, kamut, mushroom, dark wheat and other specialty pastas that I never find anywhere else. I also noticed they have all sorts of interesting flours and semolina to bake with like almond flour for example. Italian sodas, sparkling waters, cookies, chocolate, imported cheese and meats, espresso makers, I even found carob pods. I purchased my candied fruit, dried figs, dates and peeled almonds for the Panforte and then picked up all the spices at The Park Slope Food Coop, best spices around. 

Panforte is a traditional Sienese cake and dates back to the 13th century, so I dedicated this holiday cake to my niece, Siena, who my sister named after the beautiful town in Italy. It is a highly spiced fruit cake and has all the warmth of winter. You can enjoy a small slice of it with tea or serve after a meal with coffee and liqueurs. It's also follows Antonio Carluccio's recipe from the book, Two Greedy Italian's Eat Italy, only I doubled the ingredients to make a slightly thicker 8 inch round cake. You could also easily make a smaller 4 or 6 inch cake using half of the ingredients.


Panforte Senese (Traditional Sienese Cake)

Rice paper, for lining
600g dried figs and dates, pitted
4 tbsp runny honey
100ml Vin Santo
1 teaspoon each of ground cloves, cinnamon, pepper, nutmeg
6 tbsp plain flour (I used unbleached all purpose flour)
200g soft brown sugar
600g candied fruit (citron, lemon, orange etc.) I used citron
200g peeled almonds
icing sugar, for dusting

Makes 1 8in cake (1 inch thick)


Preheat the oven to 325 degrees. Line an 8 inch round baking tin with edible rice paper. ( I used a round tin with a removable base and trimmed my rice paper into a circle.)

Mince the figs and dates coarsely, then put into a saucepan. Add the honey and cover with the Vin Santo. Add the spices, flour and brown sugar, and melt over gentle heat until everything comes together. Cook gently for 10 min.

Pour the mixture into a bowl and add the candied fruit and almonds. Mix well and pour everything into the lined baking tin. Bake for 40 to 45 min., then remove from the oven and leave to cool. Sprinkle with icing sugar and serve cut into morsels or thin slices.

Barrel Tasting at Kings County Distillery

I was over at Kings County Distillery working on some work I have been shooting as a visiting artist at The Brooklyn Navy Yard as well as finishing up a soon to come Field to Fork story for Nona Brooklyn. I accompanied co-owner and whiskey maker Nicole Austin in the 2nd floor Barrel Room, while she did some barrel tasting of a new rye whiskey she had recently made.

You might also be interested in picking up one of the distillery's new holiday gift sets, only available at the distillery. It is a beautiful box with an illustration of the historic Paymaster building which houses the distillery at the Navy Yard and has one of each of the Kings County Distillery's Bourbon, Moonshine and Chocolate Whiskeys.
